Re-pinning, in plain terms
The cylinder is opened, the pin stack is changed, and a new key is cut to the new arrangement. That is the whole job, and on a standard lock it takes a few minutes.
From the outside the door is identical. From the inside, every key that existed before is now scrap metal. That is the entire point, and it is why rekeying beats replacement in most of the situations people think call for new locks.
Keyed alike: one key for everything
Since the cylinders are open anyway, they can all be pinned to the same key. Front door, back door, laundry, garage side door, the shed and the side gate, all answering to one key you carry.
Most houses accumulate four or five different keys because each lock arrived separately with whatever the supplier had pinned. There is no reason for that, and fixing it at the same time as a rekey costs very little more than the rekey alone.
The moments that call for it
Settlement day on a house you just bought is the clearest one. You have no idea how many keys exist or who holds them, and the agent cannot tell you either. The same applies when a tenant leaves, when a relationship ends, or after any break-in.
Asking for keys back is not a solution. Copies cost a few dollars and leave no trace, so the returned bunch proves nothing. Re-pinning the cylinders is the only step that makes every unknown key useless.
